Yes it is possible.
just use json model inside your manifest.json like this

"helloPanel": {
"type": "sap.ui.model.json.JSONModel",
"uri": "model/HelloPanel.json"
},
....
HelloPanel.json is json file inside model folder.If you make helloPanel empty(just two quotes) it is set as default model
