I think you are correct describing remaining shelf life but please don't confuse with the term
"remaining shelf life" and "minimum remaining shelf life".
Remaining shelf life will works as you said. So, in order to calculate the remaining shelf life,
it will first add the days you maintain in the field shelf life. Then, if you maintain the min. remaining
shelf life with zero days, then it will work as you described. However, if you maintain the min.
remaining shelf life, you need to minus the days you maintain in this field from the days you
calculated previously. So, if you just want it works as you described, it means you just need to maintain min. remaining shelf life to zero.
You may test the same in your sandbox to experience it. You will find it works as described.
